  • 2 lb. ground beef
  • 1 Tbs. Dijon mustard
  • 3 Tbs. oil
  • 1 tsp. thyme leaves, chopped
  • 3 tsp. garlic, chopped
  • 1 tsp. salt
  • 1 tsp. pepper
  • 6 oz. swiss cheese, grated
  • 12 small buns
  • 4 oz. baby arugula
  • 3 medium tomatos, sliced
  • 2 small red onions, sliced

Heat the grill. In a large bowl, with a fork mix the ground beef, mustard, oil, thyme, garlic, salt, and pepper. Shape the meat into 12 2-inch patties. Brush the hot grill with oil and place the patties on the grill. Cook for 4 minutes and flip to cook for another 4 minutes. For the last two minutes of the cooking time, sprinkle some cheese on the top of each patty and let it melt. Toast the buns on the grill after removing the cooked patties. Divide the arugula onto each bun, top with the patty, and layer the tomato and red onion.
