Ingredients

  • 3 rock lobster tails, 6 to 8 oz. each, cooked, cut in chunks, chilled
  • 1 C. diced celery
  • 1/4 C. slivered almonds
  • 1 Tbs. chopped green onion
  • Dressing
  • 3/4 C. mayonnaise
  • 2 Tbs. heavy cream
  • 2 Tbs. lemon juice
  • 1/4 tsp. sugar
  • 1/4 tsp. salt
  • 1/4 tsp. dried leaf tarragon, crushed
  • 1/8 tsp. white or black pepper

Directions

Put chilled lobster, celery, almonds, and green onion in a salad bowl. Combine dressing ingredients; blend well. Toss lobster mixture gently with dressing. Garnish with sliced green onions and sliced almonds, if desired.
