Ingredients

  • 1 can chick peas (rinsed and drained)
  • 1 roasted red bell pepper
  • 1 tsp. garlic puree
  • 1/4 C. freshly squeezed lemon juice
  • 1/2 C. extra virgin olive oil
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1 Tbs. cilantro, chopped, for garnish

Directions

Combine all ingredients except cilantro into a blender or food processor and blend until smooth.  Transfer to serving dish and garnish with 1 tablespoon of chopped cilantro and 1 tablespoon of olive oil.
