  • 1/2 C. grated romano cheese
  • 1/2 C. grated parmesan cheese
  • 1 C. all purpose flour
  • 1 tsp sweet basil leaves
  • 1 tsp black pepper
  • 1 tsp salt
  • 3 eggs
  • 1/2 C. of all purpose flour (place in shallow baking dish)
  • 6 pieces trimmed boneless skinless chicken breast
  • 6 slices mozzarella cheese
  • 1 jar or marinara or pasta sauce

Mix together cheese, flour, basil, pepper and salt and place in small shallow baking dish. Mix eggs in medium bowl. Dredge chicken breast in flour, then egg, then romano parmesan breading, making sure breading adheres to chicken. In skillet, heat small amount of oil over medium high. When oil is hot, slowly put in chicken and brown, turn over and brown on the other side. When chicken is done, remove from pan and place on a cookie sheet. Spoon marinara sauce over chicken, place one piece of mozzarella cheese on each piece of chicken and put under broiler until cheese melts. Serve with cooked pasta sautéed with butter and garlic.
