Sometimes all you need is a simple dinner with simple ingredients. Take some rotini pasta and stir in little pieces of sun-dried tomatoes to give your meal a burst of flavor. This dish works for vegetarians and non-vegetarians, while tasting delicious!

  • 7 C. rotini pasta
  • 2/3 C. sun-dried tomato, drained and chopped
  • 2/3 C. parmesan cheese, grated
  • 2 Tbs. thyme
  • 2 Tbs. olive oil
  • 2 cloves garlic, minced
  • 1/4 tsp. pepper
  • 1/2 tsp. salt

Cook pasta in boiling water until al dente, then drain and reserve 1/2 C. of the cooking water. Return pasta to pot and add sun-dried tomatoes, cheese, thyme, oil, garlic, salt, and pepper. Mix well to coat pasta, then serve immediately.
