Ingredients

  • Salad:
  • two 16-oz. packages tricolor rotini
  • 2-3 carrots, peeled and shredded
  • 1 red bell pepper, sliced
  • 1 C. black olives, sliced
  • Marinade:
  • 1 1/2 C. olive oil
  • 1/2 C. white wine vinegar
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 4 cloves garlic, pressed
  • 1 tsp. dried basil
  • 1 tsp. dried oregano
  • 1 Tbs. Dijon mustard
  • 1 Tbs. sugar

Directions

Cook rotini according to package directions.  Drain and cool.  Add carrots, pepper, and olives to cooked rotini in a bowl.  In a separate bowl, combine marinade ingredients.  Stir well.  Pour over pasta.  Adjust seasonings and spices to taste.  Refrigerate 1-2 hours before serving to blend flavors.


Serve with: Grilled Chicken Strips
