Rotisserie Chicken Pot Stickers

- 1/2 lb. rotisserie chicken meat, shredded
- 1 Tbs. carrot, finely minced
- 1 Tbs. green onion, finely minced
- 1/2 tsp. garlic, finely minced
- 1/2 tsp. ginger, grated
- 1/4 tsp. salt
- 1/4 tsp. sugar
- 10 wonton wrappers
- 1 egg beaten
- 1 bottle soy sauce
Puree rotisserie chicken in a food processor until a smooth paste forms. Add carrot, green onion, ginger, garlic, salt and sugar, then pulse a couple of times. Measure about a tablespoon of filling into the center of wonton wrapper, brush beaten egg on top of the four edges and bring corners together and press to seal.
Let pot stickers sit in refrigerator for 10 minutes so the egg glue sets. Prepare a greased steamer with hot water. Once done steaming, drop a couple dumplings in and steam for 15 minutes, remove. Sear in a hot wok for about 30 to 45 seconds or until the edges are brown and crispy.
