Ruby Tuesday's Grilled Chicken Salad

- 2 skinless, boneless, chicken breasts
- 1 Tbs olive oil
- 2 Tbs lemon juice
- 2 C chopped lettuce (purple and green mix)
- 2 C chopped cucumber
- 2 C cherry tomato; halved
- 1 C arugula
- 1 C croutons
* All vegetables should be washed
Start by preparing the chicken. Sprinkle on some salt, pepper and paprika onto the chicken to season. Ensure that the meat is well coated.
Then heat a grill pan over medium heat and drizzle some oil over. Once the pan is hot enough, place the chicken pieces on the pan. Cook each side for about 5-10 minutes until brown and cooked through.
When it is done, remove and set aside.
In a bowl add in the, lettuce, cucumber, tomatoes and arugula. Drizzle in some olive oil and the lemon juice. Toss until everything is well combined. Add some salt and pepper if you like.
When the salad is ready, transfer it equally into 2 bowls. Take the prepare chicken, cut them in slices and lay it on the prepared salad leaves.
Add on a few croutons and serve!
