  • 1 lb. pasta (like rigatoni)
  • 1 C. spinach, finely chopped
  • 1 C. red onion, thinly sliced
  • ½ C. green olives
  • 1 C. ham, cooked and thinly sliced into strips
  • ½ C. feta cheese, crumbled
  • ¼ C. Parmesan cheese, shredded
  • ¾ C. olive oil
  • 2 T. lemon juice
  • 3 T. balsamic vinegar

Cook pasta according to package directions and drain. In a large bowl, combine pasta, spinach, onion, olives, ham, feta, and Parmesan. In a small bowl, whisk together olive oil, lemon juice, and balsamic vinegar. Pour over pasta and toss well to evenly incorporate.
