Russ’s Creamy Egg Salad

If you like egg salad, this will become a favorite recipe. Makes an excellent egg salad sandwich, or serve over salad greens.

Ingredients

  • 1 Pkg (8 ounces) Cream cheese (softened)
  • 1/4 C Mayonnaise
  • 1/2 tsp Salt
  • 1/8 tsp Pepper
  • 1/4 C Green or sweet red pepper (finely chopped)
  • 1/4 C Celery (finely chopped)
  • 1/4 C Sweet relish (pickle or hamburger)
  • 2 Tbs Minced fresh parsley
  • 8 Eggs (hard boiled and chopped)

Directions

In a mixing bowl, beat cream cheese, mayonnaise, salt and pepper until smooth. Add green pepper, celery, relish and parsley. Fold in eggs. Refrigerate until serving.
