Ingredients

  • one 3-oz. pkg. mint flavored gelatin
  • 1 C. hot water
  • 1/8 tsp. salt
  • 2 Tbs. cider vinegar
  • 1 C. cucumber, grated

Directions

In a medium mixing bowl, dissolve gelatin in the hot water. Add the salt and vinegar. When the mixture is cool, add the cucumber. Place in refrigerator to thicken. Goes well with cottage cheese or a dollop of mayonnaise for a light lunch.
