Russ's "No Peek" Beef Stew

  • 2 lbs. beef stew or chuck meat
  • 4-5 stalks celery
  • 4-5 potatoes
  • 4-5 carrots
  • 3 lg. onions
  • one 15-oz. can beef broth
  • one 16-oz. can stewed tomatoes
  • 5 Tbs. tapioca
  • 1 tsp. salt
  • 1 tsp. pepper

Cut up vegetables into bite-sized pieces. Combine all ingredients in a greased medium roasting pan or Dutch oven. Cover and bake for 4 hours in 325-degree oven. "Don't peek!"
