Ingredients

  • 3/4 C. sifted soybean flour
  • 1 3/4 C. sifted white all-purpose flour
  • 1 tsp. salt
  • 2 Tbs. sugar
  • 2 tsp. baking powder
  • 3/4 C. milk
  • 1 egg, beaten
  • 1 Tbs. shortening, melted

Directions

Sift dry ingredients together. Combine milk, eggs and shortening. Add sifted ingredients and mix only enough to dampen the flour mixture. Fill greased muffin pans 1/2 full and bake in hot oven at 425 degrees for 20 minutes.
