Rustic Boiled Beef Sauce

Ingredients
- 5 tomatoes, peeled and cut into pieces
- 2 garlic cloves, chopped finely
- 2 tsp. chopped parsley
- 2 Tbs. chopped basil
- 1/2 C. olive oil
- 1 tsp. salt
- 1 tsp. freshly ground pepper
- 1 Tbs. wine vinegar
- 1/2 tsp. grated lemon rind
- 1 lb. leftover cold boiled beef
Directions
Mix together all the ingredients except the meat and let stand, covered, in a bowl. When ready to serve, slice beef and pour sauce over it.
