  • 4 tomatillos
  • 4 chopped garlic cloves
  • 4 ounces queso fresco
  • 2/3 cup olive oil
  • 3 tablespoons red wine vinegar
  • 1 teaspoon instant espresso
  • 1 teaspoon honey
  • 1 cup watercress
  • 4 spring onions
  • 3 cups frisee
  • ½ sliced cucumber
  • 1 cup cilantro
  • Salt and pepper
  • Vegetable oil
  • Mixed Greens

Halve the spring onions and remove the husks of the tomatillos. Then rinse and quarter the tomatillos. Combine the onions, tomatillos, cheese, and garlic in a plastic bag. Add 1/3 cup olive oil to the bag and turn to coat. In a bowl, whisk the honey, vinegar, and espresso. Add the remaining olive oil gradually and continue to whisk constantly. Season the bowl with salt and pepper. Remove the onions and tomatillos from the bag and grill over medium-high heat on a lightly oiled grill. Grill for 5 minutes. Grill the cheese for 10 minutes. Chop the cheese and cut the veggies into smaller pieces. Toss the greens in a large bowl and season with salt and pepper. Drizzle the greens with half of the dressing. Add the cucumber, herbs, cheese, and grilled vegetables. Drizzle the salad with the rest of the vinaigrette.
