Salami N' Pasta Salad

Time to try something a little less conventional...this salad is sure to blow you away.

  • 7 oz. small pasta shells, uncooked
  • 1 C. cherry tomatoes, sliced in half
  • 1 C. ripe olives, sliced in half
  • 1 block (6 oz.) of mozzarella cheese, cut into thin strips
  • 4 oz. salami, cut into thin strips
  • 1/2 C. bell pepper, chopped
  • 4 green onions, chopped
  • 1/3 C. vegetable oil
  • 3 Tbs. cider or red wine vinegar
  • 1 tsp. salt
  • 1 tsp. dried basil
  • 1 tsp. dried oregano
  • 1/4 tsp. garlic powder

Cook pasta shells according to package directions. Drain and rinse in cold water. Place in a large bowl and add tomatoes, olives, mozzarella cheese, salami, bell pepper and onions. Combine vegetable oil, cider or red wine vinegar, salt, basil, oregano and garlic powder in a small bowl, and mix well. Pour over salad and toss to coat. Refrigerate for 1 hour.

Yield: 8-10 servings
