Salinas Style Artichokes

Ingredients
- 4-6 medium artichokes
- 1/2 C. lemon juice
- 1/4 C. high quality (flavorful) olive oil
- pinch salt
- 1 Tbs. marjoram
Directions
Cut off most of stem and slice each artichoke in half. Wash thoroughly. With sharp knife, cut out blossom and smallest leaves. Fill large pot with filtered water. Add lemon juice, oil, salt and marjoram. Place artichokes stem down in water. Cover and bring to a boil for 15-20 minutes, until tender.
