Salmon Cheddar Bake
Ingredients
- 8-9 slices bread, with crust trimmed
- 1 Tbs. butter, melted
- 1 1/2 C. grated cheddar cheese, divided
- 6 eggs
- 3/4 C. low-fat milk
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 3/4 lb. salmon, cooked & flaked
- 1/4 C. green onion, sliced

Preheat oven to 350 degrees. Arrange bread in spiral pattern in a buttered 9-inch pie plate, arranging edges to form a crown. Sprinkle 1/2 C. of the cheese over bread in bottom of pie plate. Whisk together eggs, milk, salt and pepper until well combined. Fold in salmon, green onion and remaining cheese. Bake 35-40 minutes, or until center is set. Check after 15-20 minutes.
