Salmon Croquettes

This healthier version of the tasty salmon patties is baked instead of fried and features egg whites.

Ingredients

  • 12 oz. canned salmon, cleaned
  • 2 to 3 egg whites
  • 1 onion, grated
  • Some Flour, or Matzo meal as a binder
  • salt and pepper to taste

Directions

Mix the salmon, onion, egg whites salt and pepper together; then add enough flour or Matzo meal to bind. Preheat the oven to 400 F. Place small mounds of mixture on a cookie sheet sprayed with cooking spray Spray each croquette with cooking spray. Bake for 5 minutes, flip and spray again and bake for an additional 5 minutes or until golden brown.
