Salmon Croquettes
Ingredients
- 1 lb. baked or poached salmon
- 1/4 C. chopped onions
- 1/4 C. chopped celery
- 2 eggs
- 1/4 C. bread crumbs
- 1/2 C. mayonnaise
- Salt and pepper to taste
- 1/2 C. cornmeal
- 1/4 C. canola oil
Directions
In a large bowl, break the cooked salmon into small pieces. Add the onions, celery, eggs, bread crumbs, mayonnaise, salt and pepper. Combine just so the ingredients hold together loosely. Shape the mixture into patties about 2 inches in diameter; you should have at least 12 patties. Place cornmeal on a shallow plate and dust each side of the patty with cornmeal; shake off excess. In a large skillet, heat the canola oil over medium heat. Working in batches, sauté the croquettes about 4 minutes on each side or until golden brown. Remove from the skillet and place on a paper towel to drain. Serve.
