Salmon in a Golden Cloak
Ingredients
- 1 C. fish stock
- 1 bay leaf
- 1 Tbs. onion, grated
- 4-5 peppercorns
- 3 Tbs. butter
- 2 Tbs. green pepper
- 1 C. milk
- Salt and pepper
- 2 egg yolks, slightly beaten
- 2 C. canned salmon
- Buttered bread rounds, 2-in. diameter- about 2 dozen
- 2 whole cloves
Directions
Combine stock, bay leaf, onion, cloves, and peppercorns. Boil rapidly about 5 minutes; strain. Heat butter; add green pepper and cook about 5 minutes or until soft but not browned. Blend in flour. Slowly add strained stocked and milk and cook, stirring constantly, over low heat until thickened. Season to taste. Add a little of the hot sauce to slightly beaten egg yolks; slowly add to remaining sauce and stir over very low heat for 2-3 minutes. Flake fish coarsely and place in a greased casserole. Add sauce. Arrange overlapping round of buttered bread in a circle around the edge of the casserole. Bake in 375 degree oven for about 25 minutes or until browned.
Makes 4-6 servings.
