  • 1 1/2 lb. salmon steaks
  • 1 medium cucumber, peeled
  • 2 Tbs. green onion, chopped
  • 2 Tbs. salad oil
  • 3 lemons
  • 2 tsp. sugar
  • 1/2 tsp ginger
  • 1 Tbs. soy sauce
  • 1/2 lb. fresh mushrooms, sliced

Skin and bone salmon. Cut into 1-in. chunks. Cut cucumber in half lengthwise and remove the seeds. In a medium bowl, combine onion, salad oil, juice and grated peel of 1/2 lemon, sugar, ginger, and soy sauce. Mix thoroughly. Add salmon, mushrooms, and cucumber. Stir gently to coat. Chill, and marinate salmon for about an hour. Remove salmon, mushrooms, and cucumbers from marinade. Cut remaining lemons into 1/2-in. slices; cut each slice in half crosswise. Thread salmon, lemons, mushrooms and cucumbers onto skewers, alternating fish with lemons and vegetables. Grill over medium-hot coals for 4 to 6 minutes. Turn and grill for an additional 4 minutes or until fish flakes easily.
