Salmon Quiche
Ingredients
- 1 uncooked pie crust
- 2 tins salmon
- 1/2 C. chopped red pepper
- 1/4 C. chopped onion
- 1 tsp. dill
- 3 eggs
- 2/3 C. milk
- Tex-Mex cheese

Directions
Sauté pepper and onion until soft, sprinkle over bottom of pie crust, drain salmon, break into chunks on top of pepper/onion mix sprinkle with dill. Beat eggs and milk together, pour over fish, top with the cheese. Bake at 375 degrees for about 30 minutes or until brown on top. Let cool a bit before cutting so it will hold it's shape.
Variations: You can substitute ham or chicken for the fish.
