Salmon skewers are a tasty alternative to the traditional kebabs used for grilling out. With a simple flavor these skewers match well with a variety of dipping sauces from tzatziki to teriyaki.

  • 2 lbs. salmon
  • ΒΌ C. olive oil
  • 2 garlic cloves
  • 2 T. lemon juice
  • Zest from one lemon
  • Salt (to taste)

Cut the salmon to two inch strips. Create a marinade with the olive oil, minced garlic, lemon juice and zest, and salt. Let the fish sit in the marinade for at least 30 minutes. Thread the marinated salmon onto grilling skewers.

Prepare a grill by bruising the grates with olive oil. Place the salmon on the grill at medium-high heat. Cook the fish for 3 minutes on each side. Serve the skewers with your choice of dipping sauce.
