  • 2 chorizo sausages, thinly sliced
  • 1 can chicken broth
  • 2 tsp olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 2 tsp chili powder
  • 1 cup corn, frozen. Can be substituted with beans
  • 1 cup salsa
  • 1 can tomatoes, diced

Set on medium heat; pour the chorizo into a frying pan and cook for 5 minutes. In a saucepan with olive oil, cook the onions, garlic and chili powder for 3 minutes. Add the broth and tomato into the saucepan. Mix and pour the chorizo and corn inside. Heat and let it simmer to tenderize the corn. Pour the salsa and cook for few minutes. Serve and enjoy.
