  • 1/2 lb. ground beef
  • 2 T. onions, chopped
  • 1 tsp. garlic, minced
  • 2/3 C. salsa verde
  • 6 oz. tortilla chips
  • 1 C. sharp cheddar cheese, shredded
  • 1/4 C. diced tomato
  • 6 green onions, sliced
  • 7 oz. refried beans

In a medium saucepan, sauté together beef, onions, and garlic. Cook until meat is brown. Drain the fat and transfer to a mixing bowl. Once the meat has cooled, pour in salsa and beans. Return mixture to skillet and simmer for five minutes. In a large casserole dish, add the chips. Distribute meat mixture on top and sprinkle with tomatoes, green onions, and cheese. Bake for 10 minutes, until cheese has melted. Serve with sour cream or guacamole if desired.
