Flan is known as a famous Mexican pudding with brown sugar and condensed milk. We decided to spice up the traditional recipe by topping this dessert with a salted caramel sauce.

  • Flan:
  • 1/2 C. brown sugar
  • 4 eggs
  • 1 10 1/2 oz. can sweetened condensed milk
  • 1 tsp. vanilla extract
  • 1 Tbs. water
  • 1 C. slivered almonds, chopped
  • Salted caramel sauce:
  • 1/4 C. corn syrup
  • 1/2 C. white sugar
  • 1/2 C. heavy cream
  • 2 Tbs. butter, salted
  • 1/2 tsp. vanilla

Preheat oven at 350 degrees F. In a saucepan filled with water over medium heat, stir in sugar until it caramelizes. Pour mixture in cake pan and swirl to coat bottom. Mix remaining flan ingredients with an electric mixer at high speed for 20 seconds. Pour over caramelized sugar. Cover pan. Fill large pan with 2 inches of hot water. Place pan with flan mixture inside large pan. Bake for one hour. Remove small pan from water and let it cool for 45 minutes. Flip over pan when done to place on serving dish.

For caramel sauce, mix corn syrup and sugar in large saucepan. Wait until it turns a deep amber while shaking pan gently. Heat cream in microwave. Remove sugar mixture from heat and whisk in cream while stirring. Return to heat. Add butter and vanilla. Bring to a boil and heat to 250 degrees F. Let it sit for 4 minutes and pour over flan while warm.
