  • 2 sweet onions
  • 1 egg, beaten
  • 2/3 C. water
  • 1 T. vegetable oil
  • 1 T. lemon juice
  • 1 C. flour
  • 1 ½ tsp. baking powder
  • 2-3 tsp. salt
  • ¼ tsp. cayenne pepper
  • Oil for frying

Cut onions into slices and separate into rings; transfer to a bowl of ice water and soak for at least 30 minutes. In a bowl, whisk together egg, water, oil, and lemon juice. Whisk in flour, baking powder, salt, and cayenne pepper until smooth. Heat oil in a large skillet or deep fryer, drain water from onions, dip into batter, and fry for 1 to 2 minutes on each side until golden. Remove from oil and drain on paper towels before serving.
