  • 1 C. peanut butter
  • ½ stick butter, softened
  • ½ tsp. vanilla extract
  • Dash salt
  • 2 C. powdered sugar
  • 1 ½ C. chocolate chips
  • 1 T. coconut oil, melted
  • ½ C. salted peanuts, chopped

In a large bowl, use an electric mixer to combine peanut butter, butter, vanilla, and salt until creamy. Mix in powdered sugar until a soft dough forms (if the dough is too sticky, add more powdered sugar). Roll dough into balls and arrange on a parchment paper lined baking sheet; freeze for an hour to set up. In a microwave-safe bowl, melt chocolate chips with coconut oil until smooth. Dip peanut butter balls into chocolate and roll into a bowl filled with peanuts to evenly coat.
