This watermelon is not as sweet as you'd normally think watermelon should be--it's more meaty. Serve it as an appetizer, side, or turn it into a salad with some raspberry vinaigrette and blue cheese.

  • 8 wedges seedless watermelon, 1 1/2 in. thick
  • 2 Tbs. oil
  • sea salt
  • pepper

Lightly sprinkle the watermelon wedges with salt on both sides. Stand the wedges on their edges on a rack over a sink or pan and let drain for 30 minutes.

Heat the grill to high.

After the watermelon has drained, rinse each piece under cold running water. Pace each piece between two paper towels and gently but firmly press to remove excess water. Stop when you feel the watermelon begin to crunch.

Brush the watermelon with oil on both sides and grill over high for 5 minutes, or until grill marks have formed and melon is softened slightly. Remove from grill and sprinkle with salt and pepper.
