Santa Fe Omelet
Ingredients
- 8 large eggs
- 1/4 can beer, non-alcoholic
- 1 C. cheese grated
- 1 small green pepper diced
- 1 small red pepper diced
- 1 small onion diced
- 1/4 C. mushroom diced
- 2 Tbs. butter
Directions
Sauté onions, green peppers, red pepper and mushrooms in butter until cooked through. Keep warm. Lightly butter a nonstick fry-pan and heat. Beat eggs with whisk until foamy. Add beer and seasoning. Mix well, pour egg mixture into skillet and cook until eggs are firm. Place on plates. Top 1/2 half of omelet with equal amounts of onion mixture. Sprinkle with 1/4 C cheese per omelet and fold other half of omelet over top.
