Santa Fe Omelet

The secret ingredient in this colorful omelet is actually non-alcoholic beer, which gives it a fuller flavor.

Ingredients

  • 8 large eggs
  • 1/4 can beer, non-alcoholic
  • 1 C. cheese grated
  • 1 small green pepper diced
  • 1 small red pepper diced
  • 1 small onion diced
  • 1/4 C. mushroom diced
  • 2 Tbs. butter

Directions

Sauté onions, green peppers, red pepper and mushrooms in butter until cooked through. Keep warm. Lightly butter a nonstick fry-pan and heat. Beat eggs with whisk until foamy. Add beer and seasoning. Mix well, pour egg mixture into skillet and cook until eggs are firm. Place on plates. Top 1/2 half of omelet with equal amounts of onion mixture. Sprinkle with 1/4 C cheese per omelet and fold other half of omelet over top.

Yield: 4 servings
