Sara's Crockpot Chicken

This is a great recipe that you can start with frozen chicken. You will have to adjust the cooking time to your particular crockpot.

Ingredients

  • 4-6 frozen boneless, skinless chicken breasts (do not thaw)
  • 1 12 oz. jar of salsa (your choice - mild, med., hot, chunky, etc.)
  • 2 Tbs. olive oil (may omit or use more, according to preference)

Directions

Place frozen chicken into bottom of crockpot. Pour salsa over. Drizzle with olive oil. Cook on low for approx. 6 hours or until chicken is done. (Serve over rice or shred and use in burritos. Cool and use in salads or slice for sandwiches, etc.)

  • This is delicious. I removed the chicken with all the goodies on top from the crockpot about 10 mins before serving, sprinkled cheddar cheese on top and covered with non-stick aluminum foil. It added more color and tasted wonderful. We served the juice for over the rice and blackbeans.
