  • 1 C. of jasmine rice
  • 1/2 C. satay sauce
  • 2 C. of chicken breast
  • 1/2 C. sliced carrot
  • 1/2 C. sliced red pepper
  • 1 C. of chopped eggplant

Boil jasmine rice in medium pot with slightly salted water for 12 minutes. Drain the rice, put it back to the pot. Place the chicken into a small saucepan and stir in 2/3 cup of the satay sauce and set aside for 15 minutes. Preheat a chargrill or frying pan on medium-high. Add olive oil, cook the chicken for 5 minutes on each side. Meanwhile, place the carrots and red peppers and eggplant into a medium saucepan and stir-fry until tender. Mix chicken with vegetables. Heat satay sauce in the microwave or in a small pot over low heat for 1–2 minutes, until warmed through. Top chicken and vegetables with satay sauce and leave it for 5 minutes. To serve, top rice 2-3 tbs. of satay sauce, divide it between plates and place chicken and vegetables on the side.
