  • 2 T. Dijon mustard
  • 1 T. olive oil
  • 1 T. fresh rosemary, chopped
  • 1 T. fresh oregano, chopped
  • 1 T. fresh parsley, chopped
  • 1/2 tsp. sea salt
  • 1/4 tsp. freshly ground black pepper
  • 1 lb. white new potatoes, halved or quartered

Preheat your oven to 425 degrees F. Take out a small bowl and mix together the mustard, oil, rosemary, oregano, parsley, salt, and pepper. Transfer the white new potatoes into a plastic zip-top bag. Pour the mustard mixture into the bag. Close the bag and shake to evenly coat the potatoes with the mustard mixture. Coat a shallow baking pan with cooking spray and add the potatoes to the prepared pan. Bake for around 50 minutes, which is about how long it should take for the potatoes to be tender. Remember to periodically turn the potatoes while baking. Serve when ready.
