- 4 large potatoes, cubed
- ½ C. oil
- 1 onion, diced
- 1 red pepper, sliced
- 2 C. cheddar cheese, shredded
- 1 tsp. hot sauce
- 5 eggs
- 1 tsp. salt
- 1 tsp. black pepper

Over a campfire, place a standing metal campfire grill. In a cast iron skillet, fry potatoes with oil for 10-12 minutes or until soft. Add onion and red pepper and cook for 5 minutes. Move to edges of grill where heat is lower. Stir in cheddar cheese and hot sauce. Crack eggs over the top. Cook for an additional 6-8 minutes or until the eggs begin to set. Remove from heat and season with salt and pepper.
