Satisfying Tomato Salsa Recipe

Cool, chunky salsas loaded with vegetables and fruits increase the vitamin and mineral content of any meal. Rich in color and healthy pigments, salsas are a perfect complement to any meat, poultry, or seafood. They are also delicious as a dip with corn chips. For extra zing, add more chiles or black pepper to the mix. The fruit/vegetable combinations are endless!

Ingredients

  • 1 large lime
  • 1 ½ pounds ripe tomatoes (about 4 large), diced
  • ½ small red onion, diced
  • 1 small jalapeño chile, seeded and finely diced
  • 2 Tbsp. chopped fresh cilantro leaves
  • ¾ tsp. salt
  • ¼ tsp. coarsely ground black pepper

Directions

From lime, grate ½ tsp. peel and squeeze 2 Tbsp. juice.  In medium bowl, mix lime peel and juice with remaining ingredients, stirring gently to combine.  Cover and refrigerate at least 1 hour to blend flavors.  Makes about 3 cups.  Approximately 15 calories/¼ cup serving.
