  • 4 cups instant rice
  • 4 chicken breasts
  • 2 eggs
  • 1 cup parmesan cheese
  • ½ tsp rosemary
  • 1 cup crushed croutons (we recommend unflavored or garlic)
  • 1/4 cup olive oil

Directions

First, prepare your instant rice according to the instructions provided. Then, set it aside and begin cooking your chicken.
Lay the chicken breasts out on a cutting board and rub with salt and pepper to taste.
Next, set out three bowls in a row. The first bowl will contain your parmesan cheese, the second will hold the eggs (whisked and combined with your rosemary), and the crushed croutons will be in the third.
Put a large skillet over medium heat and allow it to warm up as you bread the chicken.
To bread, cover a single chicken breast in the parmesan. After brushing off the excess, dip it in the egg. Finally, after allowing the excess egg and rosemary to drip off, coat in crush croutons. Repeat this process with the remaining chicken breasts.
Add olive oil to your hot skillet, about 2-3 tbsp. Then, place 2 or 3 of your chicken breasts gently into the pan. Cook then for 3-4 minutes on each side, or until golden and crispy. Remove one cutlet and slice it half to ensure it has cooked through before removing all of your chicken from heat.
