Sauced Eggplant

Ingredients
- 1 1 1/2-lb. eggplant
- 6 Tbs. olive oil
- 1/4 C. sweet butter
- 2 oz. salt pork, diced
- 1 tsp. minced fresh rosemary
- 1 tsp. salt
- 1/2 tsp. freshly ground black pepper
- 1/4 lb. Italian salami
- 1/2 lb. mozzarella cheese
- 1 C. marinara sauce, hot
- 6 Tbs. freshly grated parmesan cheese
Directions
Wash and peel the eggplant and cut it into 1/2-inch cubes. Preheat oven to 375 degrees. Combine olive oil and butter in an oven pan. Add eggplant cubes and sprinkle salt pork, rosemary, salt and pepper over top. Place in the oven, lower heat to 275 degrees, and cook for 20 minutes. Remove casing from salami and cut it into very thin strips. Dice the mozzarella. Stir the eggplant and add the salami, mozzarella and marinara. Cook for 10 minutes. Before serving, sprinkle parmesan over top.
