  • 1 T. olive oil
  • 1 onion, diced
  • 8 oz. sweet Italian sausage, casings removed
  • 10 oz. frozen chopped spinach, thawed
  • 15 oz. ricotta cheese
  • 2 C. grated Parmesan cheese, divided
  • 3 large eggs
  • salt and pepper
  • 4 C. tomato basil sauce (store bought or homemade)
  • 8 Cannelloni shells

Preheat your oven to 400°F. Heat oil until hot in a large skillet over medium-high heat. Add the onion and sauté until translucent. Place the sausage in the skillet and break it up to a fine crumble, cooking until no longer pink. Drain excess grease and set aside. In a large bowl, mix together spinach, ricotta, 1 1/2-cups Parmesan, and eggs. Gradually add the sausage and season with salt and pepper to taste. Bring a large pot of water to a boil and cook the pasta for one minute. Spread two cups of tomato sauce into the bottom of a 9x13-inch baking dish. Distribute cheesy sausage mixture into each pasta shell. Transfer to your sauce-filled baking dish. Spread the remaining sauce on top of the pasta and sprinkle with the remaining Parmesan. Bake for 20 minutes. Let stand for 10 minutes before serving.
