This saucy chicken dinner is so tender and delicious. Tomato sauce is the perfect match for the mushrooms and chicken. This dish may be old school but it’s the perfect dish to try out this new year.

  • 1.5 lb. chicken breast
  • 1 medium yellow onion, diced
  • 1 can (14.5 oz.) diced tomatoes
  • 8 oz. mushrooms, sliced
  • 1 C. chicken broth
  • 3 Tbs. olive oil
  • ½ tsp. flour
  • ¼ C. parsley, fresh and chopped
  • ¼ C. basil, fresh and chopped
  • 2 tsp. garlic, minced
  • Salt and pepper to taste

Heat a tablespoon of the olive oil in a medium skillet. Salt and pepper the chicken and sprinkle on the cayenne. Cook the chicken for 10 minutes on each side, until it’s done. While the chicken is cooking, make the tomato sauce. Place the remaining olive oil in a saucepan and toss in the onion and saute it until it’s translucent. Stir in the garlic and stir for another couple of minutes. Pour in the tomatoes and chicken broth and bring the sauce to a boil. Add salt and pepper. Lower the heat to simmer the broth and add in the sliced mushrooms. After a few minutes stir in the flour and let it immer for five minutes. Stir in the parsley and basil. Plate the chicken and pour the tomato sauce over it.
