  • 2 large boneless, skinless chicken breasts
  • 1 egg
  • 1 C. plain breadcrumbs
  • 1/3 C. grated Parmesan cheese
  • 1/2 tsp. oregano
  • 1/4 tsp. thyme
  • 1/4 tsp. onion powder
  • 1/4 tsp. garlic powder
  • salt and pepper
  • 2 T. extra virgin olive oil
  • 4 hoagie rolls
  • 1 C. marinara sauce
  • 8 oz. shredded mozzarella cheese
  • fresh basil
  • 4 pieces of aluminum foil

Preheat your oven to 350°F. Using a sharp knife, cut the chicken breasts in half lengthwise. In a shallow dish, beat egg together with a teaspoon of water. In another shallow dish, mix together breadcrumbs, grated Parmesan, oregano, thyme, onion powder, and garlic. In a large skillet, heat one tablespoon of the olive oil over medium heat. Once the skillet is hot, dredge the chicken pieces in the egg mixture and generously coat in breadcrumb mixture. Transfer to skillet and cook until browned on each side. Spray each piece of foil with cooking spray and place an open hoagie roll on each. Spread two tablespoons of marinara on both sides of each roll. Place a piece of chicken on each bottom roll and evenly distribute mozzarella on top. Sprinkle with fresh basil leaves and assemble top and bottom buns. Loosely seal each sandwich in foil and place on a baking sheet. Bake for 30 minutes. Let stand for five minutes before serving.
