Ingredients
- 2 boneless chicken breasts, cubed
- 4 T. cornstarch, divided
- 2 egg whites
- Salt and pepper to taste
- 1 T. vegetable oil
- ½ C. water
- 3 T. hoisin sauce
- 2 T. soy sauce
- ½ C. brown sugar
- 3 T. ketchup
- 1 tsp. crushed red pepper flakes

Directions
In a bowl, whisk together 3 tablespoons of cornstarch, egg whites, salt, and pepper. Add chicken and evenly coat. Heat oil in a large skillet, add chicken, and cook until no longer pink in the center; remove from heat and set aside. Returning to your skillet, whisk together water, remaining cornstarch, hoisin sauce, soy sauce, brown sugar, ketchup, and red pepper flakes. Cook over medium heat until sauce thickens. Add chicken back in and coat evenly. Serve with steamed rice and veggies.
