Eat these stuffed peppers for a light, but filling lunch or dinner. Substitute the ground pork for a meat of your choice, if you prefer.

  • 4 peppers
  • 1/2 b. ground pork
  • 1 C. instant white rice, uncooked
  • 1 C. frozen peas
  • 3/4 C. water, divided
  • 1/2 C. barbecue sauce, divided
  • 4 oz. cheese

Cut the tops of the peppers and remove the seeds. Set the peppers aside. Mix the meat rice, peas, and 1/4 C. water, and 1/4 C. barbecue sauce until just blended. Spoon into the pepper shells. Combine the remaining water and barbecue sauce in the crockpot. Stand the peppers in a slow cooker and top with the cheese. Cover and cook on low for 5 to 7 hours. Serve the peppers topped with sauce.
