Many call is a Spanish chicken stew, but we just call it a delicious recipe for a chicken, sausage and potato dinner! This recipe has it all from meat to veggies!

  • 1 tablespoon olive oil
  • 8 chicken thighs
  • 4-6oz chorizo sausage, sliced
  • 1 onion, sliced
  • 3 garlic cloves, sliced
  • ¾ cup black olives, whole
  • 3½oz dry white wine
  • 1 can chopped tomatoes
  • 5 potatoes, washed and cut into 4 pieces
  • 1 sprig thyme

Heat the oil in a large skillet and sauté the chicken for 5 minutes on each side. Remove and throw in the chorizo, cooking for about 3 minutes and then adding the onion and garlic. Cook for 5 minutes and add the wine, brining it to a simmer. Add the tomatoes, potatoes and seasoning. Remove from heat. Preheat the oven to 350F and lightly grease a baking pan. Place the chicken into the baking pan and pour the sauce with sausages into the baking pan over the chicken. Bake for 30-35 minutes, or until cooked through. Let sit for 5-10 minutes before serving.
