This easy to make casserole is meaty to the max with chicken and sausage! Enjoy this casserole with a slice of sourdough bread or a side of potatoes.

  • 4 chicken thighs, skin on
  • 3 spicy sausages, sliced
  • 3 celery stalks, sliced
  • 1 onion, diced
  • ½ can garbanzo beans, drained and rinsed
  • 8 cloves garlic, sliced
  • ½ cup chicken broth
  • 2 tablespoons honey
  • 1 teaspoon Italian seasoning
  • salt
  • pepper

Sauté the sausage in a skillet until browned and then transfer to a baking pan. Sauté the chicken until slightly browned, making sure not to overcook. Add the onion, garlic and celery to the pan. Sprinkle the seasoning over the veggies and meats and drizzle with honey. Add the broth and beans. Roast uncovered for 30 minutes, or until most of the liquid evaporates. Remove from oven and let sit for 5-10 minutes then serve.
