Sausage and Kale Soup
Ingredients
- 3/4 lb. lean (90%) Italian turkey sausage, semi-frozen and thinly sliced
- 2 potatoes, peeled and cut into bite-size pieces
- 1 onion, chopped
- 2 garlic cloves
- 1 16 oz. can pink beans, rinsed and drained
- 1 14 oz. can reduced-sodium chicken broth
- 2 Tbs. molasses
- 2 Tbs. brown sugar
- ½ tsp. black pepper
- 2 1/2 C. coarsely chopped kale
Directions
Sauté turkey, potatoes, onions and garlic in nonstick skillet until browned, about 10 minutes. Crush garlic and return to pan. Transfer mixture to a large pot; add the beans, broth, and 3 C. of water, molasses, brown sugar and pepper. Bring to a boil; reduce heat and simmer, covered, 20 minutes. Add the kale and simmer, about 5 minutes more.
