6-8 servings

Ingredients

  • 1 lb. cooked, smoked sausage links
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 2 tsp. minced garlic
  • one 28-oz. can diced tomatoes
  • 1 Tbs. parsley flakes
  • 1/2 tsp. dried thyme leaves
  • 1 tsp. Cajun seasoning
  • 1/4 tsp. cayenne pepper
  • 1 lb. uncooked, peeled, veined shrimp

Directions

In a slow cooker sprayed with vegetable cooking spray, combine all ingredients except shrimp and rice.  Cover and cook on low for 6-8 hours or on high for 3-4 hours.  Stir in shrimp and cook on low for 1 more hour.  Serve over rice.
