Sausage and Seafood Jambalaya

Ingredients
- 1 lb. cooked, smoked sausage links
- 1 onion, chopped
- 1 green bell pepper, chopped
- 2 tsp. minced garlic
- one 28-oz. can diced tomatoes
- 1 Tbs. parsley flakes
- 1/2 tsp. dried thyme leaves
- 1 tsp. Cajun seasoning
- 1/4 tsp. cayenne pepper
- 1 lb. uncooked, peeled, veined shrimp
Directions
In a slow cooker sprayed with vegetable cooking spray, combine all ingredients except shrimp and rice. Cover and cook on low for 6-8 hours or on high for 3-4 hours. Stir in shrimp and cook on low for 1 more hour. Serve over rice.
