Ingredients

  • 8 ounces beef sausage
  • 3⁄4 cup chopped onion
  • 1 teaspoon minced garlic
  • 1 16-ounce can diced tomatoes with juice
  • 1 teaspoon dried thyme leaves
  • 1⁄2 teaspoon crushed red pepper flakes
  • 1 19-ounce can white beans
  • 1 10-ounce package frozen chopped spinach, thawed and drained
  • Salt, to taste

Directions

Cook the sausage in a large deep skillet for about 10 minutes on medium heat, or until browned. Stir in onion, garlic, then tomatoes and cover and cook for another 10 minute or until onions are tender.
Add remaining ingredients and stir to continuously for another 10 minutes. Transfer to prepared dish and serve.
