  • 1 pound sausage, crumbled
  • 2 tablespoons butter
  • 8 flour tortillas
  • ¾ cup shredded cheese
  • ¼ cup salsa
  • 6 eggs

In a large skillet cook the crumbled sausage over medium-high heat. Stir the meat until it is browned or for about 10 minutes. Place the sausage on paper towels to drain. Next, melt the butter in the skillet and add the eggs. Stir frequently until they are scrambled. This should take 2 minutes. Add the sausage and salsa to the eggs and stir gently, then remove from heat. Distribute the egg and sausage mixture evenly into the tortillas and sprinkle cheese on top.
