  • 3 Tbs. butter, unsalted
  • 1 (12-oz.) can buttermilk biscuits, refrigerated
  • 4 eggs, beaten
  • 1/4 C. milk
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1 C. sausage, skinless and cooked until browned
  • 4 oz. cheddar cheese slices

Preheat oven to 375 F. Butter muffin tins with 2 Tbs. butter. Press bottom of biscuits in muffin tins. In a large mixing bowl, beat eggs, milk, salt and pepper with a whisk. Layer browned sausage and cheese in muffin tins. Melt remaining butter in skillet over medium heat. Add egg mixture. Cook until nearly set but still soft. Spoon scrambled eggs into muffin tin. Top with biscuit top. Bake 10 to 12 minutes or until biscuits are light brown.
